How to open Clams: 1. Scrub clams under cold water before opening and have a bowl ready. 2. Locate the hinge of the clam where the muscles are visible on either side. 3. Use the beveled edge of the blade to break the bond between the muscle and shell by teetering the blade to open. 4. Carefully slide the tip of the knife along the inside of the top shell to detach the upper muscles and again for the lower shell. 5. Transfer the meat into the bowl and discard the shell.
