Cooking instructions (makes 2 cups) in a pot with a lid, coat ½ cup fonio well with 1 tablespoon oil. Turn heat to high. Add 1 cup water and bring to a boil. Add a pinch of salt, stir, cover, and tum heat to low for 1 minute. Turn off the heat and let sit covered, 5 minutes. Fluff with a fork. Serve hot or cold, with anything. Dress it up. Fonio loves company! Microwave it 1 part fonio, 2 parts water. Cover tightly + microwave 2 minutes. Let sit covered 3 minutes + then fluff! Curried fonio pilaf in a large pan over med-high heat, sauté diced onion + ginger in olive oil, 3-5 minutes. Add curry spices, currants, chickpeas, salt + pepper and cook, stirring often, 3 more minutes. Fold in cooked fonio and turn off heat. Squeeze lemon juice and garnish with parsley. Serve with anything! Fonio hot cereal mix 1 part fonio + 4 parts water or milk of choice + a pinch of salt. Bring to a boil, stir, and turn down to low, stirring occasionally, 3-5 minutes.
